Mexican ceremonial cacao from the El Vado region is a rare terroir product, grown in a small mountain community on the slopes of the Sierra Madre (350 m above sea level). Here, cacao is cultivated by only about 150 residents, preserving traditions passed down from generation to generation. Rich soils, a humid tropical climate, and manual processing create cacao with a bright, dessert-like flavor and natural energy.

Genetics

Cacao from El Vado belongs to Mexican Trinitario lines with a pronounced influence of ancient Criollo, characteristic of the southern regions of Mexico. This genetics is known for its dessert sweetness, softness, and a complex fruity profile. Trinitario from Chiapas is distinguished by a clean taste, the absence of sharp acidity, and bright plum-banana notes, which makes it especially suitable for ceremonial drinks.

Aroma and taste

Mexican cacao has a dessert-like, soft taste reminiscent of chocolate ice cream. The palette harmoniously combines:

  • the sweetness of ripe plum

  • notes of dried banana

  • light herbal nuances that add freshness and a sense of vitality

The profile is round, rich, without bitterness.

Traditions and origin

Cacao is grown on small family plots located on hard-to-reach mountain slopes. Farmers use traditional methods of fermentation and natural drying, preserving the natural taste and energetic value of cacao. Production supports local communities and helps preserve the region’s cultural heritage.

How to prepare

To obtain a soft, rich, aromatic drink:

  1. Take 15–20 g of cacao (about 1 heaping tablespoon).

  2. Add 150–200 ml of hot water (80–90°C).

  3. Stir until smooth.

  4. For a more airy texture, use a whisk or milk frother.

  5. If desired, add spices—cinnamon, vanilla, nutmeg, or a pinch of cayenne pepper.

You’ll get a drink with gentle energy, ideal for morning rituals, meditation, and focus work.

SIA SWEECO  2020
Limited Liability Company  “SWEECO” has signed an agreement with Investment and Development Agency of Latvia (LIAA) on Incubation support within the framework of the ERDF     Project No. 3.1.1.6/16/I/001 “Regional Business Incubators and Creative Industries Incubator”.
             
At SIA “SWEECO”, the digitalisation project No. DIGI/2025/4037 is being implemented with the support of the European Union Recovery and Resilience Facility (NextGenerationEU). The total project funding amounts to EUR 9,990.
Within the scope of the project, the company acquired a Pomati SL16 chocolate tempering machine, which was delivered in April 2026 and installed at the production facility in Daugavpils, 18. novembra iela 103‑2. The equipment is intended for automating the chocolate production process, ensuring a stable temperature regime and consistent product quality.
The introduction of this equipment has significantly improved the organisation of the production process — the amount of manual work has decreased, quality control has improved, and overall operational efficiency has increased.
The project contributes to the digitalisation of the company and complies with the requirements of the European Union, as confirmed by the attached certificates. The project is financed by the European Union Recovery and Resilience Facility (NextGenerationEU).
